I'm gonna be honest. There are few positions today where people will put their lives on the line in order to save someone else and be honorable and whatnot. People today are more practical. They just want a semi-new car and a box of chocolates. There's no need to galavant around in hundreds of pounds of plate armor proclaiming good deeds.
Knights have filtered down from heroes of epic deeds to under paid cops and volunteer firemen. These jobs are the jobs that require people to willingly put their lives on the line for the sake of others. Oh, and librarians.
